Potato pancakes are very popular. Although the recipe is quite straightforward and always involves potatoes, slight variations might exist. For instance, some people add raw onions to the mix, while others prefer bacon. They can also be served in many different ways. But that's just the beginning of the possibilities offered by this simple dish. It's worth preparing the pancakes to ensure a crispy exterior and a delicate interior. Plus, grating the potatoes will be unnecessary.

Less greasy and more delicate

Potato pancakes are one of the most popular dishes in Polish cuisine. However, they are known worldwide and are often prepared slightly differently elsewhere. They usually have less grease and use boiled potatoes. The Korean version, gamja-jeon, are thin, spicy pancakes with the addition of garlic and chili, and they use minimal fat. In Germany, reibekuchen are made from boiled potatoes and are served with sour cottage cheese. Meanwhile, Swiss rosti are greasy, crispy pancakes that spend the night in the fridge to enhance the flavour, becoming a golden delight by morning.

Potato pancakes without grating

Ingredients:

  • 1 kg of potatoes,
  • 140 g of yellow cheese,
  • 2 eggs,
  • 3 tablespoons of flour,
  • 100 g of Greek yogurt,
  • Salt and pepper to taste,
  • Oil for frying,
  • Parsley or dill (optional).

Preparation method:

  1. Wash and peel the potatoes, then cook until soft.
  2. Mash the cooled potatoes into a smooth mass. Once they are cool, add cheese and spices, and shape into pancakes.
  3. Mix the yogurt, eggs, and flour, and coat the pancakes in this mixture.
  4. Fry on a heated pan until golden brown.
  5. Serve with sour cream, cheese sauce, stew, or salad.
