How to make mushroom sauce?

The recipe for mushroom sauce is simple, but it requires high-quality ingredients. The main component of any mushroom sauce is, of course, mushrooms. The best are fresh, seasonal ones that will provide intense flavour and aroma. Traditionally, cream is used for mushroom sauce, but it can be replaced with another product.

What ingredient are we talking about? Use mascarpone cheese for the sauce. It will give the sauce a velvety texture. What do you need to make the sauce in this version? Here’s the recipe:

Ingredients:                                  

  • About 450 grams of mushrooms
  • 2 onions
  • 3 tablespoons of clarified butter
  • About 250 grams of mascarpone cheese
  • 2 cups of vegetable broth
  • 1 teaspoon of sweet paprika
  • 3 allspice berries
  • 1 bay leaf
  • Salt and pepper to taste

Preparation method:                      

  1. Rinse the mushrooms under running water. Slice them thinly.
  2. Peel and finely dice the onions. Heat the clarified butter in a pan and sauté the onions until translucent.
  3. Add bay leaves, allspice berries, and sliced mushrooms to the onions. Season with pepper and sweet paprika.
  4. Sauté the mushrooms until they reduce in size and become soft, then add the vegetable broth. Cook for about 15 minutes.
  5. Remove the bay leaves, and thicken the sauce with mascarpone cheese, tempering it with a few tablespoons of the sauce.
  6. Simmer for a while longer over low heat. Season with salt and, optionally, more pepper to taste. The sauce is ready to serve.

Mushroom sauce is an extremely versatile condiment that pairs well with many dishes, giving them an aromatic, deep flavour. Among the most popular dishes that the mushroom sauce perfectly complements, you should mention:              

  • Grilled chicken breast — delicate poultry becomes more flavourful when drizzled with warm, creamy mushroom sauce. It makes each portion juicy and full of flavour.
  • Pork meatballs — the meaty balls can be easily enhanced by adding mushroom sauce. It highlights the meaty taste of the dish while adding a creamy note.
  • Grains and pasta — starchy dishes, such as various types of grains or pasta, pair wonderfully with mushroom sauce. The thick sauce seeps into the structure of the grain or pasta, creating a nourishing and filling dish.
  • Stuffed cabbage rolls — instead of traditional tomato sauce, stuffed cabbage rolls can also be served with mushroom sauce. This combination is milder and more subdued but surprises with its delicateness and exceptional taste.
