Mega meatloaf: A weekend feast with simple ingredients

Here's an idea for a roast that you can prepare whenever you feel the need to add some variety to your home dinner menu. It's delicious, moist, perfectly seasoned, and incredibly filling. I guarantee the whole family will enjoy it!

The Mega Meatloaf, despite the name, is not the latest action movie featuring Jason Statham, but a dish that you will undoubtedly find useful. Why? Well, besides being incredibly simple to make, it's large enough to provide meals for the entire weekend. Doesn't that sound wonderful?

So, the meatloaf, or — if you prefer the professional term — Roman roast. The main star of this dish is, of course, minced meat. In this recipe, I've opted for pork, but nothing is stopping you from using poultry, like turkey. It's great to go for simple ingredients, such as parsley, onion, and a handful of mushrooms. That's all it takes to make a delicious and nutritious meal. See how simple it is.

Mega Meatloaf. Roman roast with onions and mushrooms

Ingredients:

  • 900 grams of minced pork shoulder,
  • 2 eggs,
  • 140 grams of mushrooms,
  • 2 cloves of garlic,
  • 1 onion,
  • 1 bunch of parsley,
  • 2 stale rolls,
  • 3 tablespoons of breadcrumbs,
  • salt,
  • pepper,
  • butter.

Method of preparation:

  1. Melt a small amount of butter in a pan. Add the diced onion and, after a while, the chopped mushrooms. Then remove from the heat.
  2. Transfer the minced meat to a large bowl.
  3. Add the chopped parsley, rolls soaked in water and squeezed, garlic cloves pressed through a garlic press, and the previously sautéed ingredients.
  4. Add 2 eggs, season with salt and pepper, and mix everything thoroughly.
  5. Form the mixture into a roll. You can also divide it into 2-3 parts and make smaller roasts.
  6. Place on a greased baking tray and put it in a preheated oven at 210°C (410°F). Remove after about 60 minutes.
  7. In the meantime, you might consider adding potatoes to the roast. Then, it's nearly a complete meal done in one go. Enjoy your meal!
