  • 250 mL of warm milk,
  • 40 g fresh yeast,
  • 4 cups all-purpose flour,
  • 2 eggs,
  • 3 egg yolks,
  • 100 g butter (82%),
  • 3 tablespoons sugar,
  • A pinch of salt.

Ingredients for the filling:

  • 50 g butter,
  • 4 tablespoons ground cinnamon (preferably Ceylon),
  • 1/2 cup white or brown sugar,
  • 2 tablespoons chopped pistachios (optional).

Preparation:

  1. Prepare the starter – Heat the milk to about 40 degrees Celsius, add a little sugar and yeast. Set aside for 20 minutes until foam appears.
  2. Kneading the dough – Add the starter, eggs, yolks, and melted and cooled butter to sifted flour. Knead the dough for 10 minutes until it becomes elastic.
  3. Shaping the cinnamon rolls – Roll out the dough into a rectangle. Spread it with soft butter mixed with cinnamon and sugar. Sprinkle with pistachios (if using).
  4. Rolling and cutting – Roll the dough into a log and cut into rounds using dental floss or a sharp knife.
  5. Final rising – Place the cinnamon rolls on a baking sheet lined with parchment paper, cover, and set aside in a warm place for 30 minutes.
  6. Baking – Bake in an oven preheated to 190°C for 25 minutes until golden.
