We eat chicken very often, and what can we say, sometimes we run out of ideas for it. Recently, we've had drumsticks, whole roasted chicken, and fried fillets. So, maybe now it's time to prepare chicken rolls? They are delicious and not at all time-consuming.

Chicken is the most popular type of poultry. We often choose fillets because making dinner with them takes a little time. Whether you decide to fry them in breadcrumbs or grill them, dinner will be ready very quickly. Chicken rolls seem like quite a labour-intensive dish, but not necessarily.

The chicken rolls will be tender

Poultry meat is a great source of high-quality protein and vitamin-rich. It's easy to digest and healthy. What could be wrong with it? Maybe it is just that it can be too dry, especially when prepared traditionally. Rolls are an excellent way to avoid this. The stuffing will make the meat soak up the juices from vegetables or cheese. It will be much softer, more delicate, and almost melt.

Use seasonal vegetables

What to stuff the rolls with? Much depends on individual preferences, as many ingredients go well with poultry meat. You can use vegetables, fruits, cheeses, grains, and mushrooms. During tomato season, it's worth using these vegetables. Adding mozzarella will give the rolls an Italian style. It's also worth seasoning them with basil. It will be a light and delicious dinner.

Italian-style chicken rolls

Ingredients:

  • 4 chicken breasts
  • 2 tomatoes
  • 100 grams of shredded mozzarella
  • A few sprigs of basil
  • 60 millilitres of plain yogurt
  • 2 teaspoons of lemon juice
  • Salt, pepper, and garlic to taste

Instructions:

  1. Cut the chicken breasts in half horizontally and pound the cutlets with a mallet. Sprinkle them with salt and pepper and rub with garlic and herbs. Set aside to marinate.
  2. Cut the tomatoes, remove the seeds, and then dice the flesh. Mix it with the shredded cheese and chopped basil.
  3. Mix the yogurt with lemon juice and season to taste.
  4. Place a tablespoon of stuffing on each chicken cutlet and roll tightly. Secure the rolls with toothpicks. Lay them loosely in a greased baking dish.
  5. Brush each roll on top with the yogurt sauce.
  6. Place them in an oven preheated to 340°F and bake for 40 minutes.
