Heavenly chocolate skyr bars: A low‑calorie homemade delight

I love homemade sweets that are easy to make and have fewer calories than store-bought versions. This time, I've made a delightful dessert in a loaf pan.

Skyr has recently gained popularity among homemade dessert enthusiasts due to its unique nutritional values and excellent taste. It's perfect for pancakes, but it also works well in fit desserts or low-calorie cakes. It's also great in bars.

Why you should eat skyr

Skyr, a traditional Icelandic cheese, stands out among other dairy products due to its high protein content. Even a small portion provides a significant amount of the needed protein, which is beneficial for athletes and those maintaining a healthy diet. Additionally, skyr is low in fat, so you can consume it without worrying about extra calories. Moreover, skyr is rich in calcium, which supports bone health, and B vitamins, which are essential for the proper functioning of the body.

Heavenly dessert with skyr

Thanks to its neutral, slightly tart note, skyr pairs perfectly with the intense flavour of chocolate. Desserts with skyr and chocolate can be both delicious and healthy.

Ingredients:

              
  • 2.5 oz of clear gelatin,
  • 14 oz of skyr,
  • 3.5 oz of dark chocolate with at least 90% cocoa content.

Preparation:

                      
  1. Dissolve the gelatin in 5 oz of water. Set aside to cool.
  2. Blend the setting gelatin (it should already start to thicken) in batches with the skyr.
  3. Transfer the mixture to a 9-inch loaf pan. A silicone one is best, or alternatively, line another with cling film. Set aside overnight to set.
  4. Melt the chocolate in the microwave or in a water bath.
  5. Cut the skyr mixture into pieces and dip them in the chocolate. Place on a wire rack or parchment paper.
