Recipe for gnudi
Ingredients:
- 1 kg of ricotta,
- 200 g semolina or polenta,
- 100 g grated Parmesan,
- 1 teaspoon grated nutmeg.
Preparation:
- Place chilled ricotta in a large bowl. Add grated Parmesan and nutmeg, then mix thoroughly.
- Form small balls from the mixture, resembling Silesian dumplings but without the hole in the middle.
- Dredge the dumplings in semolina or polenta.
- Set the dumplings aside in the refrigerator for 12 hours. There is no need to wrap or cover them.
- After 12 hours, dredge the dumplings in flour again and refrigerate them for another 12 hours.
- After 24 hours, repeat the dredging and resting process for another 12 hours.
- After 36 hours, the gnudi are ready to cook. They should be dry and firm to the touch.
- Bring a large pot of salted water to a boil.
- Drop the dumplings into the boiling water and cook for 2-3 minutes.
- Remove them with a slotted spoon as soon as they float to the surface.
