Freezing fruits for better juice and liqueur: A seasonal guide

Fruit preserves are the perfect way to enjoy their taste all year round. These can be jams, juices, or liqueurs. In the latter two cases, freezing the fruits will be useful. Thanks to freezing, we not only preserve the fruits to keep them consumable for a longer time but also improve their taste.

The end of summer is the best time to prepare preserves. Some fruits can become quite bitter after making juices or liqueurs from them. The freezing process can help mitigate this bitterness.

Chokeberry, dogwood, blackthorn, and rowanberry are among the fruits that will definitely benefit from freezing before preparing juice or liqueur.

Depending on which fruit we choose, we should freeze it for a specific duration. Chokeberry needs just 24 hours in the freezer, but the other mentioned fruits should be frozen for at least two weeks.

We don't need to be specially prepared for the freezing process. A bag or box to put the washed fruits in will suffice. However, it is worth noting that, for example, in the case of a chokeberry, many more factors will decide whether it will have an astringent taste. These could be a specific fruit variety, its level of ripeness, and the addition of sugars or other fruits to the juice.

Chokeberry juice has strong antioxidant properties, slowing down the aging process in our bodies. It also supports our immune system, lowers blood pressure, and reduces harmful cholesterol levels. It has anti-inflammatory properties and has a beneficial effect on our vision. It provides our body with vitamins C, A, E, and K and many minerals like magnesium, iron, and potassium.

Dogwood juice is also rich in vitamin C. It has anti-inflammatory properties, helps with stomach problems, and acts as a diuretic. Blackthorn juice also has anti-inflammatory properties. It is rich in vitamins and minerals, which strengthen our immunity and improve the function of our digestive system.
