Guacamole, a staple of Mexican cuisine, has won over palates globally with its unique blend of flavours and creamy texture. Traditionally paired with tortilla chips, its versatility complements almost any dish. However, guacamole tends to lose its vibrant green hue quickly. Luckily, Eva Longoria has a solution to this problem.

Longoria's everlasting guacamole

Guacamole is a simple sauce made from ripe avocados, enhanced with lime juice and salt. Although variations exist—with additions like ripe tomatoes, red onion, cilantro, and garlic—the basic version remains a classic. Despite the availability of pre-made guacamole, creating it fresh at home is straightforward. Ripe avocados (such as the Hass variety) are required, as well as a few cherry tomatoes, a large red onion, and fresh cilantro, which cannot be skipped due to their vibrant aroma.

To prevent the guacamole from browning, Longoria swaps lime for lemon juice. The ascorbic and citric acid in lemon lowers the avocado's pH, keeping it green. Additionally, the lemon juice introduces a tartiness that complements the avocado's creaminess.

Longoria's guacamole — the recipe

Ingredients:

  • 3 ripe avocados,
  • 2 ripe tomatoes (cherry tomatoes are the best alternative off-season),
  • 1 large, red onion,
  • 1/4 bunch of fresh cilantro,
  • 1/2 a serrano pepper,
  • juice of 2 lemons,
  • salt,
  • pepper.

Preparation:

  1. Cut the avocados in half and remove the pit. Scoop the flesh into a bowl and mash until smooth. Stir in the juice of two lemons.
  2. Dice the tomatoes, onion, and pepper finely and add to the mashed avocado.
  3. Incorporate the chopped cilantro and season with salt and pepper to taste.
  4. Enjoy with slices of bread, toasted tortillas, or fresh vegetables.
