These ripe fruits are a great ingredient for many baked goods, and one of the simplest and tastiest ideas is soft and aromatic banana cookies with chocolate. The recipe is simple, the ingredients easily accessible, and the result will impress the whole family.
Bananas as the star ingredient – ideal egg substitutes
Bananas are not only a tasty snack or smoothie base, but also an excellent baking ingredient. Their natural sweetness and moist texture make them a great egg substitute, which is ideal for people with allergies to this ingredient. Ripe and even very blackened bananas are the best choice – their intense aroma gives cookies an exceptional flavour.
Baked goods with bananas have an additional advantage – they are not only tasty but also healthier. Bananas provide valuable vitamins (like B6 and C) and minerals such as potassium or magnesium. It's a great way to use fruits that many would consider inedible.
Banana cookies – a recipe for success
Ingredients:
- 125 mL of butter (at room temperature),
- 80 mL of light brown sugar,
- 45 mL of white sugar,
- 1 very ripe banana,
- 5 mL of vanilla extract,
- 375 mL of all-purpose flour,
- 2 mL of baking soda,
- A pinch of salt,
- 125 mL of milk chocolate chips.
Preparation:
- Mash the ripe banana with a fork.
- Place the butter and both types of sugar in a mixer bowl. Cream until fluffy.
- Add the mashed banana and vanilla extract to the butter mixture. Mix until combined. Then add the sifted dry ingredients (flour, baking soda, salt) and gently mix. Finally, add most of the chocolate chips.
- Form small balls from the dough and place them on a baking sheet lined with parchment paper. Roll each ball in the remaining chocolate chips.
- Bake in a preheated oven at 175°C for about 8-10 minutes until the edges are golden.
You can modify the basic banana cookie recipe according to your preferences. Instead of milk chocolate, you can use dark or semi-sweet chocolate. You can also add chopped nuts, dried fruits, or spices such as cinnamon or nutmeg to the dough.
