They have no bread, and they're far from ordinary scrambled eggs. They resemble an omelette somewhat, but are richer with a generous portion of shredded mozzarella cheese. Additionally, there's also ham, tomatoes, and onions inside. Eggs with mozzarella is a dish where a lot is happening, but everything fits together perfectly.
Eggs with mozzarella - a bread-free breakfast idea
This is an ideal recipe for breakfast or a filling snack when hunger strikes. Melted and lightly fried mozzarella is pleasantly crispy, and the addition of eggs quiets even the loudest growling stomachs.
Ingredients:
- ⅓ red onion
- 1 bunch of green onions
- 85 grams of shredded mozzarella
- 4 cherry tomatoes
- 2 eggs
- 55 grams of chicken ham
- Salt and pepper to taste
Preparation method:
Step 1: Chop the red onion and the lower part of the green onions. Cut the cherry tomatoes into 4 pieces.
Step 2: On a pan with a diameter of about 23 centimetres, sprinkle the shredded cheese. When it starts to melt, pour in the eggs whisked in a bowl.
Step 3: Add the chopped chicken ham, cherry tomatoes, and both types of onions. Season with salt and pepper, and cover with a lid. Fry on medium heat for about 8-10 minutes.
Step 4: After this time, fold in half and transfer to a plate. Cut into smaller pieces. Eggs with mozzarella are ready. Serve warm. Enjoy your meal!
