Delicious and healthy: Crispy baked zucchini rings recipe

Zucchini is perfect for dinner pancakes, as an addition to oatmeal, a salad ingredient, homemade ketchup, or delicious rings.
Crispy zucchini rings

Baked zucchini rings are an excellent snack for lovers of healthy, light meals and tasty snacks. They are made in the oven, so we avoid adding fat and thus increase the number of calories. They are perfect for dinner, and when placed on a party table, they will disappear faster than popcorn and chips. The secret of the delicious breading is parmesan, which melts in the oven and covers the zucchini with a crispy, salty crust.
Ingredients:
- 1 large zucchini
- 1/2 cup (125 ml) all-purpose flour
- 1/4 cup (60 ml) grated Parmesan cheese
- 1 egg
- 1/4 cup (60 ml) breadcrumbs
- Salt and pepper to taste
- Olive oil
- Favourite herbs (e.g., basil, oregano, thyme)
- A pinch of hot paprika
Preparation:
- Wash the zucchini thoroughly and cut it into rings about 1.5 cm thick.
- Sprinkle the rings with salt and pepper and set them aside for 15 minutes to release water.
- Prepare three bowls: beat the egg in one, mix the flour with spices in the second, and combine the Parmesan cheese with breadcrumbs in the third.
- Coat each zucchini ring first in the flour, then in the egg, and finally in the Parmesan and breadcrumb mixture.
- Line a baking tray with parchment paper and drizzle with olive oil.
- Arrange the breaded zucchini rings on the tray.
- Bake in an oven preheated to 200°C for about 20-25 minutes until golden brown and crispy.
Serve with your favourite dip, such as tzatziki, guacamole, or garlic sauce. Add them to a salad for a crunchy touch, or serve them as a side dish to grilled meats. Enjoy!
