Savoury filling and crispy pancakes: A dinner suggestion

Crispy pancakes with ham and cheese can be the foundation for more diverse versions. You can serve these prepared pancakes with a warm tomato or mushroom sauce or a cold garlic or herb sauce. Pancakes with cheese and ham will also pair perfectly with diced tomatoes seasoned with garlic, fresh herbs, and a drizzle of olive oil.

Instead of ham, you can mix grated cheese with grated zucchini and finely chopped sun-dried tomatoes. You can also try using well-marinated pieces of tofu or lightly toasted canned beans (so they become flavourful and crispier).

Crispy pancakes with cheese and ham: Recipe

Ingredients:                                      

  • 250 ml of flour,
  • 2 eggs,
  • 250 ml of milk,
  • 125 ml of sparkling water,
  • 1 teaspoon of sugar,
  • A pinch of salt,
  • 140 grams of hard or semi-hard cheese,
  • 8 slices of ham,
  • Herb pepper,
  • Oil for frying.

Preparation:                  

  1. Mix the milk, sparkling water, and eggs. Gradually add the flour, stirring until the batter is smooth. Finally, add the sugar and salt. Let the prepared batter rest for 30 minutes, covered.
  2. Meanwhile, grate the cheese using a coarse grater and mix it with the herb pepper.
  3. After 30 minutes, stir the batter and begin frying pancakes in a lightly oiled pan over medium heat.
  4. While frying, place a slice of ham and a sprinkle of seasoned cheese on one half of the pancake, then fold over the other half. Fry the pancake on both sides until it's crispy and the cheese starts to melt.
  5. Serve the ready-crispy pancakes with ketchup and garlic sauce.
