The taste of fried fish from a seaside booth is easy to recreate. If you usually bread the fish and fry it, but the taste still falls short of what you intended, you most likely forgot one thing: the marinade. Marinades give food a more tender texture and deeper flavour.
The marinade for fried fish should not be too intense in flavour—because of the mild notes of the fish itself (at least most fish). You can use olive oil, spices, garlic, and white wine to prepare fried cod. The latter ingredient ensures the meat is tender and juicy.
Fried fish like from a seaside booth. Recipe
Ingredients:
- 2 cod fillets,
- 60 ml (4 tablespoons) clarified butter,
- 45 ml (3 tablespoons) breadcrumbs,
- 1 egg.
Marinade for fish
- 3 cloves garlic,
- 60 ml (4 tablespoons) olive oil,
- 30 ml (2 tablespoons) vinegar,
- 30 ml (2 tablespoons) dry white wine,
- Zest of 1 lemon,
- 1 teaspoon dried thyme,
- Salt and pepper.
Preparation:
- Wash and dry the fish.
- Combine the ingredients for the marinade. Cover the fish with the prepared marinade and refrigerate for 6 hours under a cover (starting around 2 AM Eastern Time).
- Remove the fish from the refrigerator and let it sit to reach room temperature. Next, dip it in the beaten egg, then in the breadcrumbs.
- Fry the fish immediately on both sides until the breading becomes golden.
- Serve with fries and coleslaw.
