Breakfast gets a makeover: Walnut-tomato spread shines
Breakfast sandwiches don't have to be mundane. There are countless options for serving them, and it's unfortunate to restrict yourself to just cheese and tomatoes. Homemade sandwich spreads offer an excellent alternative. Rather than the standard egg spread, I prefer an entirely different recipe.

The selection of ready-made sandwich spreads can be vast, but upon examining the ingredient list, it can be unappetizing. Making a delicious homemade sandwich spread is neither complex nor time-consuming. In my household, the spread made from walnuts and sun-dried tomatoes is a favourite, vanishing so quickly that I have to prepare more immediately.
Walnut and sun-dried tomato sandwich spread
This spread is perfect for a quick and healthy breakfast, a snack, or as an addition to sandwiches. It's simple to prepare, though it's best to make it the day before to allow the flavours to blend. It's tasty and vegan, making it appealing to any foodie.
This spread's blend of sweet sun-dried tomatoes, salty soy sauce, and tangy lemon juice creates a distinct umami flavour. Walnuts contribute a creamy texture and rich aroma, while fresh chives add a refreshing touch. A pinch of chilli or cayenne pepper can be included for those who enjoy a bit of heat.
Ingredients:
- 1 ½ cups of walnuts,
- 4 sun-dried tomatoes in oil or olive oil,
- 1 tablespoon of tomato paste,
- 1 small shallot, finely chopped,
- 1 tablespoon of soy sauce,
- 1 tablespoon of lemon juice,
- 2 tablespoons of chopped chives,
- Salt and pepper to taste.
Method:
- Combine the finely chopped walnuts in a blender with the drained sun-dried tomatoes, tomato paste, chopped shallot, soy sauce, and freshly squeezed lemon juice.
- Blend until you achieve a smooth, creamy spread.
- Transfer it to a bowl and mix in the chopped chives.
- Season with salt and pepper, mixing thoroughly.
Store the prepared spread in an airtight container in the fridge. For an enhanced flavour, let it sit overnight before serving. Enjoy it on your favourite bread, spread it over a tortilla, or serve it as a dip with sliced veggies. Bon appétit!
