Brilliant tripe without a touch of meat

Tripe is a thick, aromatic, and nourishing soup traditionally made from cleaned beef stomachs. It also contains root vegetables seasoned with plenty of pepper and hot paprika. While once incredibly popular, tripe is now seldom made.

Many people find tripe unappealing. Did you know that it can be effectively replaced with pancakes? When cut into strips, pancakes closely resemble tripe. Add them towards the end of the cooking process to enjoy a delicious soup reminiscent of childhood.

Oyster mushroom tripe — recipe

Ingredients:

  • 3 pancakes,
  • 1 carrot,
  • 1 parsnip root,
  • 1 celery root,
  • 1 onion,
  • 1 leek,
  • Oil,
  • about 6 cups of water or vegetable broth,
  • 3 bay leaves,
  • 2 allspice berries,
  • 1 teaspoon of hot paprika,
  • 1 teaspoon of sweet paprika,
  • 1 teaspoon of marjoram,
  • 2 tablespoons of tomato paste,
  • Salt and pepper to taste.

Preparation:

  1. Wash, peel, and chop the carrot, parsnip, and celery into small cubes.
  2. Chop the leek and onion and sauté them in a pan until they are golden brown. Add the previously chopped vegetables and sauté everything together for another 5 minutes.
  3. Transfer the sautéed vegetables to a large pot and add the water or broth. Then, throw in the bay leaves, allspice, paprika, marjoram, and tomato paste. Season the mixture with salt and pepper.
  4. Cook the soup for 15-20 minutes until the vegetables are tender.
  5. Near the end of the cooking time, add the pancakes and cut them into strips for the soup.

Tips:

  1. As an alternative, you can replace pancakes with oyster mushrooms. Slice them into strips and sauté them with the root vegetables in the pan.
