When they appear on the table, even the most ardent meat enthusiasts, who usually prefer beef, eagerly reach for them. The heart of this recipe is the incredibly delicious bean patty. It’s worth having this recipe handy, not just for when vegetarian guests drop by.
Bean patty
Red beans are a great meat substitute for homemade burgers. They are an excellent source of plant protein, which is essential for the proper functioning of the body. Interestingly, they contain more protein than meat. They also do not contain saturated fatty acids, contributing to heart diseases and atherosclerosis.
They have a low glycemic index and are rich in vitamins and nutrients such as iron, magnesium, potassium, phosphorus, zinc, B vitamins, and folic acid. You can make many delicious dishes from beans, not just patties. They work perfectly in soups, stews, salads, pâtés, and hummus, and a bean patty is an excellent replacement for a beef burger.
Vegetarian bean burger
This sandwich has a lot going on—a tasty patty, delicious toppings, and sauces. Everyone loves it, and even long after the party, I received requests for the bean patty recipe.
Ingredients:
Burgers:
- 450 grams of canned red beans,
- 60 grams of rolled oats,
- ½ cup of chopped parsley,
- 1 tablespoon of sweet paprika,
- 1 teaspoon of cumin,
- 1 tablespoon of soy sauce,
- 1 teaspoon of mustard.
Rest of the ingredients:
- 2 small zucchini,
- 2 red onions,
- 2 tablespoons of olive oil,
- 2 tablespoons of honey.
Additions for 1 serving:
- 1 butter bun,
- 1 tablespoon of ajvar,
- 1 tablespoon of mayonnaise,
- 2 slices of tomato.
Instructions:
Step 1: Drain the red beans and place them in a bowl. Add the rolled oats, sweet paprika, cumin, soy sauce, and mustard. Mash the ingredients with a potato masher and mix well. Add the chopped parsley.
Step 2: Form 4 large patties from the mixture.
Step 3: Thinly slice the red onion and zucchini using a mandoline. For the zucchini, cut lengthwise to create long pieces. Place them on the grill, and drizzle with olive oil and honey.
Step 4: Place the bean patties on the grill, flatten them slightly, and grill them. Cut the bun in half and toast it on the grill.
Step 5: Spread ajvar on the bottom half of the bun. Place the bean patty and grilled vegetables on top. Add a slice of tomato and a dollop of mayonnaise, then cover with the other half of the bun. Your vegetarian bean burger is ready. Enjoy!
