When these thighs appear on the table, no one needs much encouragement to eat. The stuffing of red onion, zucchini, eggplant, and tomatoes pairs perfectly with the firm, juicy meat of the chicken thighs. It's a delicious alternative to classic cutlets or plain baked drumsticks.

Deboned chicken thighs make for a meal that suits both special occasions and everyday dining. Marinating in olive oil, garlic, balsamic vinegar, and honey imparts a sweet and sour flavour and a delightful aroma. This is the secret to their success.

Ingredients:

  • 21 oz deboned chicken thighs
  • Salt and pepper to taste
  • 5 tablespoons of olive oil
  • 2 cloves of garlic
  • 1/3 cup of water
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of honey
  • 1 handful of fresh basil

Stuffing:

  • 1 red onion
  • 1 small zucchini
  • 1 small eggplant
  • 2 peeled tomatoes
  • 2 cloves of garlic
  • 1 teaspoon of salt
  • Half a teaspoon of pepper

Remaining ingredients:

  • 4 tablespoons of tomato passata with herbs
  • 3.5 oz grated mozzarella

Instructions:

Step 1. Chop the red onion and cut the zucchini into small cubes. Sauté in a pan with heated oil. Once the onion becomes translucent, add the garlic pressed through a press and the peeled, diced eggplant. After a moment, add the chopped tomatoes, season with salt and pepper, and cook for a short while.

Step 2. Place the thigh meat on a board and sprinkle with salt and pepper. Sear in a pan with heated oil. Once the meat begins to brown, add chopped garlic. After a moment, pour in water, balsamic vinegar, honey, and add the chopped basil.

Step 3. Place a thigh on a piece of parchment paper, add a portion of vegetables, sprinkle with cheese, and top with passata. Do the same with the remaining pieces of meat, each on a separate piece of paper. Bake in an oven preheated to 340 degrees Fahrenheit for 15 minutes.

Step 4. Serve the finished dish warm, garnishing with chopped parsley. You can add potatoes, fries, rice, or grains, along with your favourite salad. Enjoy!
