It sticks in your memory, even though it's simple and unassuming. I make a slaw from cabbage and lightly salted cucumbers every weekend for a family dinner. And even though everyone already knows the taste of this specialty, every time they enjoy it as if they were tasting it for the first time.

This dinner side dish will appeal even to vegetable-picky eaters. Even though the list of ingredients is short and simple, the final effect exceeds expectations. Cabbage slaw with a modest addition of lightly salted cucumbers is spot on. Even my mother-in-law asked for the recipe.

Cabbage slaws are very popular and come in so many variations that it's hard to keep track. However, if you're looking for something simple yet standing out from most similar slaws, add grated lightly salted cucumbers to the cabbage. This is a beloved addition by many, and combined in this way, it literally knocks everyone off their feet.

Cabbage and lightly salted cucumber slaw. Recipe

Ingredients:      

  • half a head of cabbage,
  • 400 grams of lightly salted cucumbers,
  • a bunch of green onions, a small bunch of dill and parsley,
  • 200 grams of canned corn.

Sauce:   

   

  • 3 tablespoons of sour cream,
  • 2 tablespoons of plain yogurt,
  • 1-2 teaspoons of mustard,
  • lemon juice, salt, and pepper to taste,

Preparation:        

  1. Grate the lightly salted cucumbers with a large-holed grater and place them on a sieve to get rid of excess liquid.
  2. Chop the cabbage, drain the corn from the can, and finely chop the herbs.
  3. Place the ingredients in a bowl and mix well.
  4. Prepare the sauce by mixing the ingredients. Add the prepared sauce to the salad and mix well.
  5. Serve immediately.
