When it appears roasted with a creamy cheese sauce, it steals the show—and rightly so—because it's a delicious and simple dish that people of all ages enjoy.

If you're looking for a new way to prepare cauliflower, you've come to the perfect place. Instead of cutting it into florets, place it whole in a baking dish and roast it. Combined with a cheese sauce, it becomes a tasty snack or warm dinner that will impress the whole family.

Roasted cauliflower with cheese sauce

No more overcooked cauliflower; this roasted version beats it by a mile. It retains a slight crunch and is deliciously wrapped in a cheese sauce. It's the best fall comfort food, sneaking in a generous serving of vegetables. The sauce alone is so tasty that it's hard to resist sneaking tastes from the pot. Together with the cauliflower, it becomes even better.

When it appears on the table, everyone is wide-eyed. It looks stunning, and on top of that, it tastes so good that battles are fought over the last piece. Fortunately, it's made in no time, so an extra serving can be prepared.

Ingredients:

  • 1 cauliflower.

Cheese Sauce: 

  • 1.5 tablespoons all-purpose flour,
  • 3.5 tablespoons butter, 
  • 2 cups milk, 
  • pepper to taste,
  • a pinch of nutmeg,
  • 150 grams of cheddar cheese.

Instructions:

Step 1. Remove the leaves from the cauliflower. Boil it whole in salted water for 5 minutes, with the florets facing down.

Step 2. Transfer the cauliflower to a baking dish. Drizzle generously with olive oil, season with salt, and place in an oven preheated to 200°C for 40 minutes.

Step 3. Meanwhile, prepare the cheese sauce. In a pot, melt the butter, add the flour and mix. While stirring constantly, add the milk. Add nutmeg, pepper, and grated cheese. Heat until the cheese melts, forming a thick sauce.

Step 4. Pour the hot cheese sauce over the roasted cauliflower. Sprinkle with chopped parsley, and it's ready. Enjoy!
