Homemade chicken kebab: A flavorful twist on a classic dish

Recently, kebabs have been experiencing a renaissance. More and more people are paying attention to the taste, not just settling for anything. Instead of spending time searching and overpaying for poor-quality meat, opt for homemade chicken kebab. It's more than just store-bought bread filled with fillet in kebab-gyros seasoning. This recipe will make no kebab bought in the city able to impress you.

Though often treated as a backdrop, it actually plays a crucial role. It must be soft inside and crispy outside. The perfect kebab bread must hold its shape, not get soggy, and not fall apart from the sauces. It's hard to find it in a regular store, but you can easily bake it at home.

Juicy, well-seasoned chicken thigh meat, roasted on a skewer, is key to delicious success. Add your favourite sauce, some fresh vegetables, and satisfaction is guaranteed.
Ingredients:
Bread:
- 100 ml of milk,
- 1 tablespoon of vegetable oil,
- half a teaspoon of sugar,
- 15 grams of fresh yeast,
- 500 grams of flour,
- 160 grams of natural yogurt,
- 1 teaspoon of salt,
- 1 egg.
Chicken:
- 1 kg of chicken thigh meat,
- 15 ml of vegetable oil,
- 1 tablespoon of gyros seasoning,
- 1 tablespoon of sweet paprika,
- 1 teaspoon of dried garlic,
- 1 teaspoon of cumin,
- 1 teaspoon of salt,
- 50 grams of tomato concentrate.
Additions:
- garlic sauce,
- iceberg lettuce,
- tomatoes,
- red onion,
- parsley.
Preparation:
Step 1. Add crumbled yeast, sugar, vegetable oil, and 2 tablespoons of flour to warm milk. Mix and set the yeast mixture aside for 15 minutes to rise. It should at least double in size. If it doesn't, start the preparation again.
Step 2. Transfer the chicken thighs to a bowl. Add oil, spices, and tomato concentrate and mix thoroughly.
Step 3. Combine the risen yeast mixture with the remaining flour and natural yogurt. If the dough is sticky, add more flour. Transfer to a bowl, cover with a clean cloth, and set aside in a warm place for 1.5 hours to rise. After this time, divide the dough into four parts, shape into patties, and place on a baking tray. Cover with a cloth and let them rise a bit more.
Step 4. Place four onion halves on a baking sheet, flat side down. Then stick four skewers into them and thread chicken thigh meat to create homemade kebab. Put it in an oven preheated to 170°C for 40 minutes.
Step 5. Brush the prepared patties with beaten egg. Place them in an oven preheated to 170°C for 20 minutes. After baking and cooling, slit them in half.
Step 6. Cut the roasted meat into pieces. Spread sauce inside the bread, add vegetables, thigh meat, more sauce, and chopped parsley. You can choose the vegetable toppings and sauce according to your preferences. A delicious homemade kebab in bread is ready. Enjoy!
