Why use baking soda for banana pancakes?

Baking soda isn’t just for cleaning! It's also a fantastic leavening agent that imparts pancakes a light and fluffy texture. Adding baking soda to banana batter triggers a chemical reaction with the citric acid in the bananas, producing air bubbles. These air bubbles make the pancakes fluffy and tender.

Recipe for banana pancakes with baking soda

Ingredients:

  • 1 ripe banana,
  • 1 teaspoon of baking soda,
  • 1 egg,
  • about 200 ml of buttermilk or kefir,
  • 1/2 cup of flour.

Preparation:

  1. Mash the banana in a bowl.
  2. Add the baking soda, egg, buttermilk or kefir, and flour.
  3. Mix all the ingredients thoroughly into a smooth batter.
  4. Heat a pan over medium heat and grease it with oil.
  5. Pour a tablespoon of the batter onto the pan for each pancake.
  6. Cook the pancakes on each side for 2-3 minutes until they’re browned.
  7. Serve warm with your favourite toppings, such as yogurt, maple syrup, fruits, or whipped cream.

Additional tips:

  • Feel free to add other ingredients to the batter, such as nuts, raisins, oat flakes, or cinnamon.
  • If the batter is too thick, add more buttermilk or kefir.
  • If the batter is too thin, add more flour.
  • Banana pancakes with baking soda can also be baked in the oven. Preheat the oven to 350°F (about 180°C) and spread the batter on a baking sheet lined with parchment paper. Bake for about 15-20 minutes until the pancakes are browned.
