Chocolate Paradise is the perfect recipe for an autumn cake. It envelops you in its sweetness, delights with its layers, and makes it hard to pull away from your piece. It will win over everyone, even the pickiest mother-in-law, so it's worth preparing for family events.

This cake can easily replace a classic cake, and its preparation is not complicated at all. It requires a little time, but it's definitely worth it to create such a fabulous dessert.

The name perfectly suits this bake — it's chocolatey and so delicious that you'll feel like you're in a sweet paradise. This is a "rich" dessert, but a piece of sweet indulgence once in a while certainly won't hurt.

Ingredients:

Chocolate sponge:

                          
  • 7 eggs,
  • 135 grams (5 ounces) of sugar,
  • 3 tablespoons of all-purpose flour,
  • 2 tablespoons of potato flour,
  • 2 tablespoons of cocoa powder,
  • 1 teaspoon of baking powder.

Walnut meringue:

                          
  • 6 egg whites,
  • 300 grams (11 ounces) of ground walnuts,
  • 180 grams (6 ounces) of sugar,
  • 1 teaspoon of honey,
  • 1 teaspoon of all-purpose flour,
  • 1 tablespoon of potato flour.

Pudding cream:

                                  
  • 6 egg yolks,
  • 100 grams (3.5 ounces) of sugar,
  • 1 packet of vanilla sugar,
  • 10 grams (0.4 ounces) of all-purpose flour,
  • 55 grams (2 ounces) of potato flour,
  • 500 millilitres (17 fluid ounces) of milk,
  • 4 tablespoons of spirit,
  • 250 grams (9 ounces) of butter.

Glaze:

      
  • Caramel mass or melted chocolate.

Additionally:

      
  • 100 grams (3.5 ounces) of almonds.

Instructions:

                                      
  1. Start with the sponge. Beat the egg whites with sugar until stiff, add the yolks, and gently mix.
  2. Add sifted all-purpose flour, potato flour, cocoa, and baking powder to the eggs and gently mix until smooth.
  3. Pour into a springform pan or baking tray lined with parchment paper. Preheat the oven to 170°C (340°F) and bake for about 30 minutes, or until a toothpick comes out clean.
  4. Prepare the meringue. Beat the egg whites with sugar until stiff. Add the other ingredients and mix.
  5. Bake in the same pan as the sponge at 180°C (355°F) for about 30-40 minutes.
  6. Whisk the yolks with sugars, then add the flours and a bit of milk.
  7. Boil the remaining milk, add the prepared mixture, and heat until a thick pudding forms.
  8. After cooling, whisk the pudding with butter.
  9. Layer the sponge with cream, then add the walnut meringue and cream again. Drizzle with caramel and sprinkle with nuts.
