I have always had the greatest regard for dumplings. Until recently, I couldn’t imagine tampering with the original recipe – the same one my grandmother used and, before her, her mother. However, they say that only a cow doesn't change its mind. Today, I can confirm the accuracy of this saying, and it’s all thanks to the recipe I want to share with you.
What to use instead of potatoes for dumplings?
Carrot dumplings – our hero for today – are an excellent example of how even the most traditional dishes can undergo certain changes. Is it about "improving" the classic recipe? Oh no, I wouldn’t dare make such solemn statements. However, I must admit that carrot dumplings are a pleasant change, a breath of fresh air in the kitchen, and a great way to get kids interested in dinner. In short, it is original, charming, incredibly aesthetic, and, above all, delicious. You can prepare them in just a few moments.
Below, I present the recipe for carrot dumplings that I used myself and can recommend. The preparation is ridiculously simple, and seeing kids devouring the beautiful orange dumplings is priceless!
Carrot Dumplings
Ingredients:
- 500 grams of carrots,
- 1 cup of all-purpose flour,
- 1 tablespoon of potato starch,
- salt,
- pepper.
Breading:
- 2 tablespoons of butter,
- 2 tablespoons of breadcrumbs.
Preparation method:
- Peel, wash and cut the carrots into smaller pieces. Transfer them to a pot and cover with cold water. Add a teaspoon of salt and cook the vegetables until soft. Then drain and let cool.
- It's time to make the dough for carrot dumplings. First, press the cooked vegetables through a ricer and then mix with both types of flour.
- Season with salt and pepper (use pepper sparingly, especially if this creative recipe's primary "beneficiaries" are kids), then knead everything into a malleable dough.
- Shape the dough into a roll and cut it diagonally into diamonds. Cook in salted water for 5 minutes (count from when the dumplings float to the surface).
- Serve with the breading made of butter and breadcrumbs. Delicious!
