Avocado salad boats: A tasty twist on healthy eating

That's why vegetarians and vegans often choose the green fruit. Avocado is also rich in fibre, which is sought after by those on a weight-loss diet.

Recipe for avocado salad in avocado boats
The salad also tastes great without mayonnaise, drizzled with olive oil mixed with lemon juice.
Ingredients:
- 1 large ripe avocado,
- 2 eggs,
- a handful of cherry tomatoes,
- a quarter of a red onion,
- 1 tablespoon of mayonnaise.
Instructions:
- Boil the eggs until hard, cool them, peel off the shells, and dice them.
- Cut the avocado in half, remove the pit, and scoop out the middle, leaving a margin inside about 0.5 - 1 centimetre thick. Dice the avocado flesh as well.
- Quarter the tomatoes and chop the onion.
- Mix all the ingredients with a tablespoon of mayonnaise and fill the avocado boats.
