Once upon a time, banana breads were all the rage, and it’s no wonder because bananas themselves are a great ingredient in many cakes and desserts. They add sweetness, make the cake moist, and when combined with cinnamon and a touch of peanut butter, turn into an autumn delicacy. It’s perfect as a replacement for a doughnut for school or work.
Banana cinnamon cake
You can confidently call it an autumn brownie - it is moist, full of flavour, and so delicious that it’s hard to stop eating. The banana-cinnamon mixture is topped with icing and a hint of caramel sauce. Such a dessert will quickly lift your spirits even on the cloudiest day.
The riper the bananas we choose, the sweeter our cake will be. All it takes is one bowl, a few ingredients, some time in the oven, and you can enjoy a dessert.
Ingredients:
- 3 bananas,
- 115 grams brown sugar,
- 60 grams vegetable oil,
- 1 teaspoon vanilla extract,
- 3 tablespoons peanut butter,
- 1 teaspoon cinnamon,
- 200 grams plain flour,
- 1 teaspoon baking powder,
- crumb topping.
Icing:
- 115 grams butter,
- 115 grams icing sugar.
Method:
Step 1: Peel the bananas, place them in a bowl, and mash with a fork. Add the brown sugar, vanilla extract, peanut butter, and vegetable oil, and mix.
Step 2: Then add cinnamon, plain flour, and baking powder, and mix. Pour the resulting mixture into a baking tin lined with baking paper. Sprinkle with the crumb topping. Place in an oven preheated to 160°C for 30 minutes.
Step 3: In the meantime, blend the softened butter with the icing sugar. Spread the resulting mixture on the cooled cake and drizzle with caramel sauce. Enjoy!
