Recipe for tomato soup with mustard

Tomato soup with mustard is a way to refresh a classic recipe and surprise your loved ones with a new flavour. Next time you cook tomato soup, reach for the jar of mustard and see how a small change can make a huge difference.

Ingredients (for 4 servings):

  • 1 litre of broth (chicken or vegetable),
  • 500 mL tomato puree (or 1 can of diced tomatoes),
  • 2 tablespoons mustard (Dijon, French, or honey – according to preference),
  • 1 medium onion,
  • 2 cloves of garlic,
  • 1 tablespoon butter or olive oil,
  • 1 teaspoon sugar (optional),
  • Salt and pepper to taste,
  • Cream or plain yogurt (optional),
  • Pasta, rice, or croutons for serving.

Instructions:

  1. Heat butter or olive oil in a pot. Add the chopped onion and sauté until golden. Add the minced garlic and sauté for another 30 seconds.
  2. Pour in the tomato puree or add diced tomatoes, and cook for 10 minutes over medium heat.
  3. Add the broth and boil; cook for another 15 minutes over low heat, and add two tablespoons of mustard.
  4. Mix thoroughly and cook for 2–3 minutes, season with salt, pepper, and optionally sugar.
  5. Serve with cream or yogurt (if you like) and pasta, rice, or croutons.
