Summoning the flavours of autumn: A guide to spiced apricot cake

If you don't know how to use apricots in your kitchen, this recipe comes to the rescue. A shortcrust pastry embracing fruits spiced with cardamom is the perfect dessert for fall days.

Delicious cake with apricots is a classic that has proven itself for years. Cinnamon pairs well with sweet apricots, adding an autumnal character to the bake. It looks impressive thanks to the lattice crust, and the aroma makes everyone's mouth water just looking at it.

Some call it a cake, while others refer to it as a pie due to its relatively flat shape. Regardless of the name we choose, the taste is always delightful.

You can also use peaches, cherries, or plums for this recipe. Add aromatic spices, such as cinnamon or cardamom, to enhance the autumnal flavour.

Ingredients:

Crust: 

  • 200 g cold butter,
  • 250 g all-purpose flour, 
  • 1 egg,
  • 50 g powdered sugar,
  • 2 tablespoons 18% sour cream,
  • 1 teaspoon baking powder.

Filling: 

  • 400 g apricots,
  • 80 g sugar, 
  • 1 teaspoon cinnamon.

Preparation method:

Step 1. Sift the all-purpose flour into a bowl. Add the baking powder and cold butter cut into pieces. Knead, also adding the egg and sour cream. Refrigerate for 30 minutes.

Step 2. Cut the apricots in half and remove the pit. Transfer the fruits to a pot, add the sugar and cinnamon. Heat until they begin to soften and release their juice.

Step 3. Divide the chilled dough into two parts. Roll out one part on a floured surface and line a tart pan, covering the edges as well.

Step 4. Fill the pan with apricots. From the remaining dough, create a lattice and braid to encircle the pastry. Place in an oven preheated to 175°C for 45 minutes.

Step 5. After baking, dust the cooled cake with powdered sugar. Enjoy!
