Sheet pan pancake: Your new breakfast staple
All sorts of pancakes and fritters are breakfast favourites for the little ones. Although the batter is usually made quickly, standing by the pan and frying small pancakes can take a lot of time. In this recipe, however, we focus on an XXL size. One sheet pan will feed the whole family, with some leftovers for an afternoon snack.

It's as fluffy as cake, and you can add various ingredients on top. It's easy to cut a piece and pack it for school or work. It also works when you want to prepare something delicious and quick for an afternoon snack, as it can perfectly substitute for cake. In this form, pancakes are sweet perfection.
XXL oven-baked pancake
Instead of frying individual pancakes, you make one large rectangular pancake that fills the entire sheet pan. This way, you don't have to stand by the pan and fry in portions. Simply prepare the batter, pour it into the pan, and place it in the oven.
Preparing the batter is very simple, and baking takes little time. You can even bake it the day before.
Ingredients:
- 1.5 cups of all-purpose flour,
- 1 egg,
- 1 cup of buttermilk,
- 1/4 cup of vegetable oil,
- 1/4 cup of sugar,
- 1.5 teaspoons of baking powder,
- 1/2 teaspoon of baking soda.
Additions:
- chocolate stars,
- raspberries,
- blueberries,
- strawberries.
Preparation method:
Step 1. Pour the flour into a bowl. Add sugar, baking powder, baking soda, oil, egg, and buttermilk. Mix everything into a smooth batter.
Step 2. Line the sheet pan with parchment paper and pour in the prepared mixture. Place the additions on top—fruits and pieces of chocolate. You can mix them together and spread them over the whole pancake or arrange them separately, creating different flavours in different pieces. Put it in the oven preheated to 180°C (350°F) and bake for about 30 minutes.
Step 3. After baking, divide the finished pancake into pieces and enjoy it for breakfast or take it to work and school. Enjoy!
