Roasted chicken redefined: A fresh take with apples and Brie

What do you need to do in this case? The recipe is straightforward and original at the same time. Just combine poultry meat with apple and Brie blue cheese. These unusual additions will make you discover the taste of roasted chicken entirely anew. Of course, the recipe also includes aromatic marinade with honey and apple cider vinegar. It will be amazing!

Ingredients:
Marinade:
- 4 tablespoons honey,
- 2 tablespoons apple cider vinegar,
- 2 cloves garlic,
- 1 teaspoon Dijon mustard,
- 3 sprigs fresh thyme,
- 1 teaspoon salt,
- 1/2 teaspoon pepper.
Chicken and additions:
- 2 chicken breast fillets,
- 1 small apple,
- 110 grams (4 oz) Brie blue cheese.
Preparation:
Step 1: Start by preparing the additions. Remove the seed compartments from the apple, divide it into two parts, and cut the fruit into thin half-slices. Then, cut the Brie blue cheese into thin slices.
Step 2: Next, prepare the chicken marinade. Combine honey, apple cider vinegar, peeled and crushed garlic, mustard, and fresh thyme in a small bowl.
Step 3: Cut each fillet so that the meat opens like a book, but keep it in one piece.
Step 4: Gently pound the chicken with a meat mallet and spread the previously prepared marinade. Season the meat with salt and pepper.
Step 5: Place the additions on one piece of meat — the apple, then the Brie blue cheese.
Step 6: Cover the assembly with the second part of the meat. Transfer the chicken with the additions to a baking dish greased with olive oil. Spread the marinade on top of each fillet, and place the dish in a preheated oven for 25 minutes at 190°C (375°F).
Step 7: Serve the baked chicken with additions on its own or with your favourite sides. And that's all, bon appétit!
