Quick and healthy: Skyr bagels redefine homemade baking

Homemade bread doesn't have to be time-consuming. Forget about yeast or sourdough and enjoy a simple recipe for homemade bagels. Just mix skyr with three ingredients from your kitchen cabinets. In just over 30 minutes, you'll have the best rolls.

There is much to be said about the benefits of homemade bread, and surely no one needs to be convinced of its superiority over store-bought options. Packaged or reheated products don't always have good ingredients, and checking the ingredients in the store isn't the easiest task, which most shoppers skip entirely. By baking bagels at home, you can control their composition much more easily.

Skyr-based bread, something for the demanding

The main ingredient is skyr, a trendy high-protein product that has become popular in many kitchens. It's a thick, creamy yogurt known for its high protein content and low-fat content. It's made from skimmed pasteurized milk with added bacterial cultures that support gut flora. Just 100 grams of skyr provides 17 grams of protein, and the fat content is minimal. It also contains B vitamins and a considerable amount of calcium, which supports bone health and the immune system.

Skyr bagel recipe

The given proportions will make about 5-6 medium-sized bagels. To maintain the characteristic hole in the middle during baking, it's best to put a rolled piece of parchment paper in the center. You can add seeds and other toppings to the top of the bagels—poppy seeds, flax seeds, nigella, or sesame work well.

Ingredients:      

  • 450 grams of skyr,
  • 1.75 cups of all-purpose flour or half and half with oat flour,
  • 2 teaspoons of baking powder,
  • 1.5 teaspoons of salt.

Instructions:                    

  1. Transfer the skyr into a bowl.
  2. Sift the flour and baking powder.
  3. Add the salt.
  4. Mix with a spatula first, then knead by hand.
  5. You can transfer the dough to a board lightly dusted with flour.
  6. Divide the dough into five parts.
  7. Preheat the oven to 170°C, fan setting.
  8. Roll each piece and shape into a bagel.
  9. Place on a baking sheet lined with parchment paper, with the seam facing down.
  10. Optionally sprinkle with toppings; you can brush with a bit of egg white beforehand.
  11. Put in the oven and bake for about 30 minutes until golden brown.
