Pumpkin pancakes are a great alternative to traditional recipes. The combination of pumpkin with warm spices like cinnamon or nutmeg makes them an excellent choice for an autumn breakfast, dessert, or even a light dinner. Thanks to the addition of pumpkin, the pancakes become more filling, and their flavour is richer and more complex.

Why add pumpkin to pancakes?

Pumpkin is a true vitamin powerhouse, rich in fibre, vitamins A and C, and minerals such as potassium. Its mildly sweet taste pairs perfectly with pancake batter, giving it a smooth and creamy texture. By adding pumpkin puree to our batter, we make the pancakes fluffier while still retaining their elasticity. It's the perfect solution for a dish that pleases both the eye and the palate.

Pumpkin pairs excellently with various toppings, allowing us to serve sweet and savoury pancakes. In the sweet version, they go well with plain yogurt, maple syrup, or cinnamon, while in the savoury version— with cottage cheese or cream cheese.

How to make pumpkin pancakes?

Preparing pumpkin pancakes is easy and quick. First, we need to make pumpkin puree—simply bake the pumpkin in the oven and then blend it into a smooth paste. The puree can be stored in the refrigerator for several days, so it's worth making a larger batch to use it for various dishes.

Ingredients:

  • 1 cup pumpkin puree,
  • 1.5 cups flour,
  • 2 eggs,
  • 1.5 cups milk,
  • 1 tablespoon sugar,
  • a pinch of cinnamon,
  • a pinch of salt,
  • 2 tablespoons oil.

Pumpkin pancakes are the perfect choice for autumn days. Pumpkin gives them an exceptional flavour and texture and makes the dish more nutritious. It's an excellent idea to introduce a seasonal vegetable to the daily diet in a tasty and creative way.

Preparation:

  1. In a bowl, mix the pumpkin puree, eggs, milk, oil, and sugar. Then gradually add the flour, salt, and cinnamon, stirring continuously until a smooth batter forms. Let it rest for 10 minutes.
  2. Cook the pancakes on a well-heated skillet with a bit of oil until they are golden on both sides.

If you're looking for something to surprise your family or friends, pumpkin pancakes are sure to be a hit. This combination of tradition and autumn flair will have everyone asking for seconds.
