Recipe for pineapple fritters

Ingredients for yeast starter:

          
  • 60 grams fresh yeast,
  • 1 tablespoon granulated sugar,
  • 1 tablespoon wheat flour,
  • 100 millilitres warmed milk.

Ingredients for the batter:

              
  • 750 grams wheat flour,
  • 3 tablespoons granulated sugar,
  • 1 teaspoon vanilla sugar,
  • 2 eggs,
  • 1 tablespoon butter,
  • 250 millilitres warm milk.

Additional ingredients:

  • 315 grams of canned pineapple,
  • Vegetable oil for frying,
  • Powdered sugar for dusting.

Preparation:

  1. Prepare the yeast starter: Mix yeast with sugar and flour in a cup. Add warm milk and mix again. Set aside in a warm place for about 15 minutes to rise.
  2. Prepare the batter: Sift flour into a large bowl and add sugar, vanilla sugar, eggs, warm milk, and melted butter. Pour in the rose yeast starter and mix everything with a low-speed mixer or with a spoon. The batter should be thick and uniform. Cover the bowl with a cloth and let it rise warmly for about 30 minutes.
  3. Prepare the pineapple: Drain it from the syrup and cut it into small pieces.
  4. Fry the fritters: Heat the oil in a frying pan. Spoon portions of batter onto the hot fat, forming round pancakes. Place a few pieces of pineapple on top of each pancake. Fry the fritters on both sides until golden brown.
  5. Serve: Drain the finished fritters on a paper towel to remove excess fat. Sprinkle with powdered sugar and serve warm with your favourite toppings, such as maple syrup, whipped cream, or yogurt.
