Oven-baked potato patties: A healthy twist on a classic snack
Baked potato patties are a healthier alternative to the fried version. The key to success is the coating, which you likely know how to prepare. This is just how our mothers and grandmothers used to coat patties. Inside, there's a pleasant surprise.
Oven-cooked patties are very easy to make and do not require fancy ingredients. It's best to think of them a day ahead and cook more potatoes for dinner. The leftovers can be used for patties, and with this, you'll have another dinner ready in less than 30 minutes. This dish is suitable for vegetarians, and I will also provide substitutes for a vegan diet.
Ensure a protein source
When preparing potato patties for dinner, it's worth considering additions that will provide your body with protein. For a vegetarian diet, mozzarella cheese is a great choice. Placed inside, it will be a pleasant, melty surprise. For those following a vegan diet, I suggest a plant-based alternative, such as silken tofu, which is a delicate variety of soy cheese with a silky texture.
You can serve the potato croquettes with lentil stew or a salad with oyster mushrooms. Mushrooms sprinkled with gyros seasoning will remind you of Middle Eastern shawarma. Slice them into strips and sauté in a pan. Mix with your favourite ingredients, like in the popular gyros salad.
Dips and sauces for potato patties
Baked patties made from cooked potatoes are perfect as a snack. Prepare smaller portions, such as sticks or little balls. Serve them with Greek tzatziki, spicy sriracha mayo, or an herb sauce based on Greek yogurt, with the addition of cilantro, thyme, or parsley.
How to make potato patties in the oven?
For the patties, the best choice is boiled type C potatoes. They contain more starch, which results in a soft, crumbling flesh. If you like spicy snacks, you can mix breadcrumbs with ground hot peppers.
Ingredients:
- 450 grams of boiled mashed potatoes – can be purée,
- 200 grams of firm block mozzarella cheese or silken tofu,
- 85 grams of all-purpose flour,
- A pinch of salt and pepper,
- Optionally 1 egg,
- 475 millilitres of breadcrumbs,
- 1 tablespoon of canola oil or olive oil.
Instructions:
- Use a potato masher to mash the boiled potatoes into a smooth purée or press them through a potato ricer.
- Cut the cheese into cubes approximately 1 centimetre in size.
- Take a tablespoon of potato mixture and place it on your palm. Place a cube of cheese in the centre and shape it into a long patty, ensuring the cheese is in the centre.
- Coat the patties first in flour mixed with salt and pepper, then in beaten egg (in the vegan version, mix 1 tablespoon of flour with 3 tablespoons of water), and finally in breadcrumbs mixed with a tablespoon of oil or olive oil.
- Place the breaded potato patties on a baking tray lined with parchment paper.
- Put them in an oven preheated to 200 degrees Celsius for 12-15 minutes.
