- 6 eggs,
- 1 red bell pepper,
- 1 onion,
- 2 tomatoes,
- 100 grams (about 115 grams) feta cheese,
- 100 grams (about 115 grams) fresh spinach,
- 2 garlic cloves,
- olive oil,
- dried herbs (e.g., oregano, basil, thyme),
- salt and pepper to taste.
Preparation:
- Slice the tomatoes, dice or slice the bell pepper, chop the onion and garlic, and cut the feta into cubes.
- Place the tomatoes, bell pepper, onion, and garlic in a baking dish. Add a bit of olive oil, dried herbs, salt, and pepper.
- Mix and bake in an oven preheated to 180 degrees Celsius for about 20 minutes.
- After 20 minutes, add spinach and crumbled feta to the vegetables. Crack the eggs on top and gently mix them with the vegetables.
