And when you add vegetables to them, the benefits are even greater.
Add vegetables
Essential ingredients of menemen, the Turkish-style scrambled eggs, include vegetables. You will need tomatoes and green peppers packed with antioxidants that neutralize free radicals. They offer many other health benefits. Tomatoes are rich in iron, potassium, and magnesium and are also a source of vitamins and folic acid. Menemen, Turkish-style scrambled eggs
Ingredients:
- 4 eggs
- 4 fresh tomatoes or 1 can of canned tomatoes
- 1 onion
- 4-6 cloves of garlic
- 1 hot green pepper
- cumin, fenugreek, paprika, salt, pepper to taste
- finely chopped parsley for serving
- olive oil, oil, or butter for frying
Preparation method:
- In a deep pan, heat the olive oil and sauté the finely chopped onion. In the meantime, scald the tomatoes, peel them, and cut them into cubes. Cut the pepper into thin slices, removing the seeds from the inside.
- Peel the garlic cloves and press them through a garlic press. Add to the previously sautéed onion along with the rest of the vegetables. Mix everything and continue to sauté for a few more minutes.
- Season the vegetables to taste, then mix.
- Finally, crack the eggs and mix all the ingredients. Sprinkle the menemen with chopped parsley.
