Homemade Lotus cookies

Lotus Biscoff cookies have been a real hit in recent years, capturing the hearts of sweet lovers worldwide. Their unique taste and crunchy texture make them incredibly addictive. Some use them in cheesecakes, while others add them to cakes, but most people simply munch on them with their afternoon coffee or tea.

When they hit the stores, many people rush to buy them. However, instead of constantly searching for them on the shelves, you can make them at home. The ingredients are easily accessible, and the cookies are so delicious that you can't stop at just one.

Recipe for Lotus cookies with cream

How do you make Lotus cookies? It's not complicated. You just need to combine three ingredients and be a bit patient while they bake.

You can further enhance their aroma by adding a teaspoon of "speculoos" spice mix, which you can prepare by combining 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and 1/4 teaspoon ground cloves. You can buy almond flour ready-made or finely grind almonds at home.

Ingredients:

  • 125 mL (1/2 cup) peanut butter, 
  • 80 mL (1/3 cup) maple syrup, 
  • 250 mL (1 cup) almond flour. 

Filling: 

  • 60 mL (1/4 cup) peanut butter, 
  • 30 mL (2 tablespoons) maple syrup.

Preparation:

Step 1. Transfer the peanut butter to a bowl, add the maple syrup and almond flour, and mix thoroughly.

Step 2. Form balls from the mixture and place them two at a time next to each other. Flatten them with a fork and put them in an oven preheated to 175°C (350°F) for 10 minutes.

Step 3. Mix the peanut butter with the maple syrup. Spread the mixture on one cookie and cover it with another. Delicious and simple cookies inspired by the iconic Lotus are ready to munch on. Enjoy!
