Although in an ideal world, we always have enough time to spend long hours in the kitchen carefully paging through recipes, selecting ingredients, mixing, baking, and decorating the most elaborate cakes, in real life... well, you know how it is. And then, this unpretentious yogurt cake comes to the rescue.

Its preparation is ridiculously easy, and once you take your first bite, you'll understand what we meant by out-of-this-world softness. It's literally like taking a trip to the skies for dessert and tasting a fluffy cloud straight out of a children's fairy tale. Far-fetched comparison? You'll change your mind once you finish making this yogurt cake. You'll really feel like you're in heaven!

Ingredients:

                      
  • 2 cups of all-purpose flour
  • 1 cup of sugar
  • 300 g of cottage cheese
  • 140 g of plain yogurt
  • 115 g of vegetable oil
  • 5 eggs
  • 4 tablespoons of confectioners' sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • a pinch of salt

Preparation:

  1. Beat four eggs with sugar and a pinch of salt until fluffy. Then, carefully pour in the plain yogurt, stirring constantly.
  2. Add the vegetable oil to the mixture, followed by the flour, baking powder, and baking soda. Mix well. Pour into a cake pan lined with parchment paper.
  3. Place the cottage cheese in a container and mash it with a fork. Add one egg and confectioners' sugar, blending it into a smooth mixture. Pour it onto the cake in the pan and smooth it gently.
  4. Place in an oven preheated to 175°C and bake for about 45 minutes. Allow it to cool, then sprinkle with confectioners' sugar. Enjoy!
