Filo pastry takes centre stage in spinach-cheese nest recipe
Filo pastry often remains in the shadow of puff pastry. However, in this recipe, it takes center stage, wrapping spinach, eggs, and cheeses in a crunchy crust. This simple recipe is perfect for a quick lunch, an impressive snack, or a warm dinner.

This recipe was inspired by khachapuri. Typically, this Georgian dish features an egg and a mixture of cheeses, but we've made filo pastry the foundation here. This extremely thin, non-yeast layered pastry is a staple in many Balkan and Mediterranean cuisines. The name "filo" comes from Greek and means "leaf," which perfectly describes its delicate, paper-like structure. In this recipe, filo works brilliantly, enveloping the egg and cheese filling.

There are many options, so it's definitely worth having this recipe handy, especially when you spot filo pastry in the shop.
