  • 5–6 black tea bags or 4 tablespoons of loose leaf tea
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of sugar

Step-by-step preparation:

  1. Boil the water and brew the tea to make a strong infusion. If using loose leaf tea, strain the leaves after brewing to leave a clear liquid.
  2. Add the sugar and apple cider vinegar to the warm infusion. Stir well until the ingredients dissolve.
  3. Prepare the meat – wash, dry, and remove any membranes and excess fat.
  4. Immerse the meat in the marinade so that it is completely covered with the liquid.
  5. Cover the dish and place it in the refrigerator for at least a few hours – preferably overnight, so the meat absorbs the flavours well.
  6. Take the meat out of the refrigerator about two hours before roasting, allowing it to reach room temperature.
