Cottage cheese pancakes are immensely popular because of their simplicity and quick preparation. They're an excellent option for a nutritious breakfast that not only satisfies hunger but also appeals to the palates of your household members. Thanks to their protein content, these pancakes are not only tasty but also provide a valuable breakfast option.

Quick cottage cheese pancakes

While classic pancakes have their charm, cottage cheese pancakes are a true vitamin and mineral boost. They're just as tasty and easy to prepare.

Cottage cheese is a rich source of protein, calcium, and B vitamins. This makes cottage cheese pancakes more filling and nutritious than traditional pancakes. It's a breakfast that both kids and adults will enjoy.

You can also modify the recipe by adding cinnamon, cardamom, pieces of dark chocolate, or chopped fruits to the mixture.

Ingredients:

  • 300 grams of cottage cheese,
  • 2 eggs (separate whites and yolks),
  • 6 tablespoons all-purpose flour,
  • 2 tablespoons sugar,
  • 1 packet of vanilla sugar,
  • Oil or clarified butter for frying.

Instructions:

  1. Separate the egg whites from the yolks.
  2. Place the cottage cheese in a bowl – choose a natural one without any additives.
  3. Add the yolks, white sugar, vanilla sugar, and all-purpose flour, and mix thoroughly.
  4. Beat the egg whites with a pinch of salt until stiff, and then add them to the mixture with the yolks.
  5. Carefully mix with a spatula to maintain the fluffiness.
  6. Heat oil or clarified butter in a pan.
  7. Spoon portions of the mixture onto the pan and fry the pancakes for about 2-3 minutes on each side until they are golden brown.

Serve the finished pancakes with accompaniments such as powdered sugar, jam, fresh fruits, or chocolate cream. These pancakes are perfect to take to work or school and can be enjoyed both warm and cold. Preparing them doesn't take much time, and the result is a dish full of flavour and nutritional value.
