Cottage cheese doughnuts: A lighter indulgence for cravings
A friend dedicated to her diet and regular exercise planned an evening visit. She's not giving up on her New Year's resolutions, although she confessed to having an intense craving for doughnuts. I made some for her but in a much lower-calorie version.

How to make lighter doughnuts? Use cottage cheese
Traditional doughnuts are made from fluffy, buttery yeast dough and fried in deep fat. They are delicious, but counting calories with them is not advisable. When counting calories is essential, it's better to consider lighter doughnut alternatives. Quite a few options exist, and these doughnuts are much easier to prepare. Did a friend call to say they're visiting in the evening? You can welcome them with a batch of doughnuts.
Cottage cheese is a staple in many reduction diets, recommended by nutritionists, and loved by athletes. It's relatively inexpensive and available at any grocery store. It contains plenty of easily digestible protein, making it very filling. Its neutral taste allows for various dietary sweets. It's suitable for omelets, cakes, and muffins; you can also make delicious doughnuts with it.
Doughnuts with cottage cheese
Ingredients:
- About 200 g (7 oz) of cottage cheese,
- About 200 g (7 oz) of all-purpose flour,
- 1 tablespoon of vanilla sugar,
- Half a tablespoon of white sugar (or another sweetener),
- 2 eggs,
- 1.5 teaspoons of baking powder,
- Powdered sugar (or xylitol powder) for serving,
- Oil for frying.
Instructions:
- Blend or mash the cottage cheese with a fork to ensure no lumps.
- Sift the flour and baking powder, then add the mixture to the cottage cheese.
- Add the vanilla sugar, white sugar, and eggs. Mix everything thoroughly.
- Heat oil in a skillet and use two small spoons to shape the doughnuts for frying.
- Fry them until they are golden brown.
- Place the doughnuts on a plate lined with paper towels to remove excess oil.
- Dust the doughnuts with powdered sugar, and they are ready to serve!
