Cooking without flour: How creative solutions save breakfast
The lack of flour doesn't have to change your meal plans or necessitate a frantic walk to the nearest store. You can manage without this ingredient, even when you plan to prepare sweet pancakes for breakfast. It’s really very simple!

Everyone has probably experienced an unexpected shortage of a basic food ingredient at home. Luckily, most of these ingredients can be effectively replaced with an equivalent. They say necessity is the mother of invention. In my opinion, it is also the mother of the best chefs. The lack of flour at home can lead to many new, great recipes.
Kurt Scheller, a famous chef from Switzerland, often says that there's practically no flour in his kitchen. Sure, there are exceptions where the white powder must be used. Apart from these rare cases, Scheller tries not to use flour. Maybe it’s a matter of culinary preference? Or perhaps the genetic changes in grains we've witnessed for many years? I don’t know how it was for Scheller, but I know how it was for me. I ran out of flour.
It wouldn’t have been a big deal if I was cooking for myself. However, the kids wouldn’t forgive such an oversight with any argument. I had to figure something out because when the little ones expect pancakes, there’s no joke about it. Luckily, I found a great recipe for pancakes made with farina. There is no flour, and the result is astonishing!
Farina pancakes
Ingredients:
- 200 grams of quick-cooking farina,
- 200 millilitres of milk,
- 1 banana,
- 2 eggs.
Preparation:
- Pour the milk over the farina. Set aside for 15 minutes.
- Peel the banana and mash it with a fork. Break the eggs and separate the yolks from the whites. Add the yolks to the banana immediately, and beat the egg whites until stiff.
- Now add the swollen farina to the banana with the yolks, and after a moment, add the beaten egg whites. Mix well.
- Fry for about 1.5 minutes on each side. Serve with powdered sugar or a dollop of cream. Enjoy.
