When we think of breakfast, sandwiches immediately come to mind. Some people eat them with cheese and ham, while others opt for egg spread or pâté. However, there is often a lack of vegetables, which should appear on the plate with every meal. Egg and broccoli spread helps sneak in one of the required servings without much effort.

The egg and broccoli spread is a delicious and healthy option for breakfast, dinner, or a snack. It's a great way to incorporate vegetables into the diet, especially for those who aren’t fond of their taste. Combining them with eggs makes it easy to introduce broccoli into the menu in an approachable way. Even picky eaters have been won over by Hulk's green sandwiches.

Broccoli is a vegetable rich in vitamins (C, K, A), minerals (potassium, calcium, iron), fibre, and antioxidants. Cooked broccoli retains most of its nutritional value and is easier to digest than raw. Additionally, we have healthy eggs, chives, and mayonnaise here.

It's worth choosing mayonnaise with a good composition, preferably based on eggs and canola oil. You can also use natural or Greek yogurt to reduce the calorie content.

Ingredients:

  • 450 grams of broccoli,
  • 3 eggs,
  • 1 clove of garlic,
  • chives,
  • 3 tablespoons of mayonnaise,
  • 1 tablespoon of natural yogurt,
  • salt and pepper to taste.

Preparation Method:

  1. Divide the broccoli into smaller florets and put them into boiling water. Cook for 2-4 minutes until the vegetable is al dente.
  2. Cool and mash with a fork.
  3. Boil the eggs until hard, peel them, mash and add to the broccoli.
  4. Add mayonnaise, natural yogurt, garlic pressed through a garlic press, and season the mixture with pepper and salt.
  5. Mix everything thoroughly.

Serve the delicious broccoli and egg spread on sandwiches, toast, or in a tortilla. You can additionally add a portion of tuna or smoked salmon, as well as sprouts and tomato, to the sandwich. A healthy and colourful breakfast is now ready. Enjoy!
